Ingredients

  • 2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 24 oz (680g) cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup mini chocolate chips
  • 1/2 cup chopped mint chocolate pieces
  • 1 cup dark chocolate chips
  • 1/2 cup sweetened condensed milk
  • 1 tablespoon butter
  • Whipped cream (for decoration)
  • Mint leaves (for decoration)
  • Chocolate shavings (for decoration)

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. Mix together the chocolate cookie crumbs and melted butter, then press this mixture into the bottom of the prepared pan. Bake for 10 minutes and let it cool.
  3. In a large bowl, beat the cream cheese until smooth. Add the sugar and mix well, followed by sour cream and vanilla extract. Add the eggs one at a time, beating well after each addition. Fold in the mini chocolate chips and chopped mint chocolate pieces.
  4. Pour the cheesecake batter over the cooled crust and spread it evenly.
  5. Bake for 60-70 minutes, or until the center is set. Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.
  6. In a saucepan, melt the dark chocolate chips, sweetened condensed milk, and butter over low heat, stirring until smooth. Pour the fudge over the cooled cheesecake.
  7. Refrigerate the cheesecake for at least 4 hours or overnight before decorating.
  8. Decorate with whipped cream, mint leaves, and chocolate shavings before serving.

Notes

Make sure the cream cheese is at room temperature for easier mixing. For a cleaner slice, run your knife under hot water before cutting.
