- 2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 24 oz (680g) cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup mini chocolate chips
- 1/2 cup chopped mint chocolate pieces
- 1 cup dark chocolate chips
- 1/2 cup sweetened condensed milk
- 1 tablespoon butter
- Whipped cream (for decoration)
- Mint leaves (for decoration)
- Chocolate shavings (for decoration)
Instructions
- Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
- Mix together the chocolate cookie crumbs and melted butter, then press this mixture into the bottom of the prepared pan. Bake for 10 minutes and let it cool.
- In a large bowl, beat the cream cheese until smooth. Add the sugar and mix well, followed by sour cream and vanilla extract. Add the eggs one at a time, beating well after each addition. Fold in the mini chocolate chips and chopped mint chocolate pieces.
- Pour the cheesecake batter over the cooled crust and spread it evenly.
- Bake for 60-70 minutes, or until the center is set. Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.
- In a saucepan, melt the dark chocolate chips, sweetened condensed milk, and butter over low heat, stirring until smooth. Pour the fudge over the cooled cheesecake.
- Refrigerate the cheesecake for at least 4 hours or overnight before decorating.
- Decorate with whipped cream, mint leaves, and chocolate shavings before serving.
Notes
Make sure the cream cheese is at room temperature for easier mixing. For a cleaner slice, run your knife under hot water before cutting.
