Description

A decadent Mint Chocolate Fudge Cheesecake Cake combining rich chocolate cake, creamy mint cheesecake, and luscious chocolate ganache.


Ingredients

  • 8 oz (225g) cream cheese, softened
  • 1/3 cup sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • Green food coloring (optional)
  • 1 3/4 cups flour
  • 1 1/2 cups sugar
  • 3/4 cup cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 cup hot coffee
  • 1 cup heavy cream
  • 8 oz (225g) dark chocolate, chopped
  • 2 tbsp butter

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Grease a 7-inch springform pan and line it with parchment paper.
  3. In a bowl, beat the cream cheese and sugar until smooth.
  4. Add the egg, vanilla, peppermint extract, and a few drops of green food coloring. Mix well.
  5. Pour this mixture into the pan and bake for 25-30 minutes until set. Let it cool completely and then chill in the fridge.
  6. Preheat your oven to 350°F (175°C). Grease and line two 8-inch cake pans.
  7. In a bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  8. In another bowl, mix buttermilk, oil, eggs, and vanilla. Add this wet mixture to the dry ingredients and mix well.
  9. Slowly stir in the hot coffee until your batter is smooth. Divide the batter between the two pans and bake for 30-35 minutes. Let these layers cool completely.
  10. Heat the cream until it is hot but not boiling. Pour it over the chopped chocolate and let it sit for 2 minutes. Stir until smooth and then add the butter. Let this cool slightly.
  11. Place one chocolate cake layer on a plate. Add the chilled mint cheesecake layer on top. Place the second chocolate cake layer on top.
  12. Pour the ganache over the cake, allowing it to drip down the sides. Chill for 30 minutes, then slice and enjoy!

Notes

For a stronger mint flavor, increase the peppermint extract. Serve chilled with mint leaves or chocolate shavings.
