Description
A decadent Mint Chocolate Fudge Cheesecake Cake combining rich chocolate cake, creamy mint cheesecake, and luscious chocolate ganache.

- 8 oz (225g) cream cheese, softened
- 1/3 cup sugar
- 1 egg
- 1/2 tsp vanilla extract
- 1/2 tsp peppermint extract
- Green food coloring (optional)
- 1 3/4 cups flour
- 1 1/2 cups sugar
- 3/4 cup cocoa powder
- 2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 eggs
- 2 tsp vanilla extract
- 1 cup hot coffee
- 1 cup heavy cream
- 8 oz (225g) dark chocolate, chopped
- 2 tbsp butter
Instructions
- Preheat your oven to 325°F (160°C).
- Grease a 7-inch springform pan and line it with parchment paper.
- In a bowl, beat the cream cheese and sugar until smooth.
- Add the egg, vanilla, peppermint extract, and a few drops of green food coloring. Mix well.
- Pour this mixture into the pan and bake for 25-30 minutes until set. Let it cool completely and then chill in the fridge.
- Preheat your oven to 350°F (175°C). Grease and line two 8-inch cake pans.
- In a bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, mix buttermilk, oil, eggs, and vanilla. Add this wet mixture to the dry ingredients and mix well.
- Slowly stir in the hot coffee until your batter is smooth. Divide the batter between the two pans and bake for 30-35 minutes. Let these layers cool completely.
- Heat the cream until it is hot but not boiling. Pour it over the chopped chocolate and let it sit for 2 minutes. Stir until smooth and then add the butter. Let this cool slightly.
- Place one chocolate cake layer on a plate. Add the chilled mint cheesecake layer on top. Place the second chocolate cake layer on top.
- Pour the ganache over the cake, allowing it to drip down the sides. Chill for 30 minutes, then slice and enjoy!
Notes
For a stronger mint flavor, increase the peppermint extract. Serve chilled with mint leaves or chocolate shavings.
