A delightful dessert combining layers of rich chocolate cake, creamy cheesecake, and smooth fudge topping with refreshing mint flavor.

- 1 box chocolate cake mix
- 1/2 cup vegetable oil
- 3 large eggs
- 1 cup water
- 2 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon mint extract
- 1/4 cup sour cream
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1/4 teaspoon vanilla extract
- Crushed mint chocolate candies or mint chocolate chips for garnish
- Fresh mint leaves (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
- Prepare the chocolate cake mix according to the package instructions. Pour the batter into the prepared pan and bake for 20-25 minutes, or until a toothpick comes out clean. Allow the cake to cool completely.
- While the cake is cooling, prepare the cheesecake layer by beating the softened cream cheese and sugar together until smooth. Add eggs one at a time, mixing well after each addition.
- Stir in vanilla and mint extract, followed by sour cream. Pour cheesecake batter over the cooled cake layer and bake for 35-40 minutes, or until the cheesecake is set.
- Turn off the oven and allow the cheesecake to cool inside with the door slightly ajar for 1 hour. Refrigerate for at least 3 hours or overnight.
- Prepare the fudge layer by melting the chocolate chips and heavy cream together in a microwave-safe bowl, stirring every 30 seconds until smooth. Stir in vanilla extract.
- Pour the fudge layer over the chilled cheesecake and spread it evenly. Return the cake to the refrigerator for at least 30 minutes to allow fudge to set.
- Garnish with crushed mint chocolate candies or mint chocolate chips and fresh mint leaves if desired. Slice, serve, and enjoy!
Notes
For a more intense mint flavor, add an extra drop of mint extract to the cheesecake batter. Store leftovers in the refrigerator, tightly covered, for up to 3 days.
