- 2 large eggs

- 1 tsp vanilla extract
- 1 cup mint chocolate chips
- 2 cups heavy cream
- 1/2 cup powdered sugar
- 1 tsp peppermint extract
- Green food coloring
- Fresh mint leaves for garnish
Instructions
- Preheat the oven to 350°F (175°C) and grease two 8-inch cake pans.
- In a bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla extract to the bowl and beat until the mixture is smooth.
- Fold in the mint chocolate chips and divide the batter evenly into the prepared pans.
- Bake for 25-30 minutes or until a toothpick comes out clean. Let the cakes cool completely.
- In a separate bowl, whip the heavy cream with powdered sugar, peppermint extract, and a few drops of green food coloring until soft peaks form.
- Layer the cakes with whipped cream, stacking them alternately.
- Frost the top with the remaining whipped cream and garnish with fresh mint leaves.
- Chill the cake in the refrigerator for at least 1 hour before serving.
Notes
Let the cake cool completely before frosting to prevent the whipped cream from melting.
