- 1 cup sugar
- 1/2 cup cocoa powder

- 2 large eggs
- 1 cup milk

- 1 tsp vanilla extract
- 1 cup mint chocolate chips
- 2 cups heavy cream
- 1/2 cup powdered sugar
- 1 tsp peppermint extract
- Green food coloring
- Fresh mint leaves for garnish
Instructions
- Preheat your oven to 350°F (175°C) and grease two 8-inch cake pans.
- In a bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla extract to the bowl; beat until the mixture is smooth.
- Fold in the mint chocolate chips. Divide the batter evenly between the two pans.
- Bake the cakes for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool completely.
- In another bowl, whip the heavy cream with powdered sugar, peppermint extract, and a drop of green food coloring until soft peaks form.
- Layer the cakes by spreading the whipped cream between the two layers, stacking them alternately.
- Frost the top of the cake with the remaining whipped cream and garnish with fresh mint leaves.
- Chill the cake in the refrigerator for 1 hour before serving.
