- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar (plus extra for coating)
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup mini chocolate chips
- Green gel food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add in the vanilla and peppermint extracts, mixing until well combined.
- Gradually add the flour and salt, mixing until the dough forms.
- If desired, add a few drops of green gel food coloring and mix until you achieve the desired shade.
- Gently fold in the mini chocolate chips.
- Roll the dough into 1-inch balls and line them on the prepared baking sheet, leaving about 1 inch of space between each ball.
- Bake for 12–14 minutes or until the edges are just lightly golden.
- Let the cookies cool for 5 minutes on the baking sheet before transferring them to a wire rack.
- While still slightly warm, roll the cookies in powdered sugar to coat them. Once cooled completely, roll them in powdered sugar again for a festive snowy look.
Notes
Make sure your butter is softened for easier mixing. Experiment with different types of chocolate chips for unique flavors.
