  • Ingredients required for the brownie mix (typically eggs, oil, and water)
  • 1 1/2 cups heavy cream
  • 1 cup powdered sugar
  • 1 tsp peppermint extract
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 2 cups whipped cream (or 1 1/2 cups heavy cream, whipped to stiff peaks)
  • 4 oz semi-sweet chocolate, chopped
  • 1 tbsp butter
  • Fresh mint leaves for garnish
  • Shaved chocolate or chocolate curls for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Prepare the brownie mix according to package instructions and bake in a 9-inch springform pan for 20-25 minutes. Let cool completely.
  2. In a large bowl, beat cream cheese and sour cream until smooth.
  3. In a separate bowl, whip heavy cream and powdered sugar until stiff peaks form. Fold the whipped cream and peppermint extract into the cream cheese mixture until fully combined.
  4. Spread the mint cream filling evenly over the cooled brownie base. Smooth the top and refrigerate for at least 4 hours (overnight for best results).
  5. Melt semi-sweet chocolate and butter together in a heatproof bowl in the microwave. Drizzle over the chilled cheesecake.
  6. Decorate with fresh mint leaves and chocolate curls. Slice and serve chilled.

Store leftovers in the refrigerator for up to 3-4 days, or freeze tightly wrapped for longer storage. Adjust mint flavor as desired.
