- 1 box of brownie mix (or your favorite homemade brownie recipe)
- Ingredients required for the brownie mix (typically eggs, oil, and water)
- 1 1/2 cups heavy cream
- 1 cup powdered sugar
- 1 tsp peppermint extract
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 2 cups whipped cream (or 1 1/2 cups heavy cream, whipped to stiff peaks)
- 4 oz semi-sweet chocolate, chopped
- 1 tbsp butter
- Fresh mint leaves for garnish
- Shaved chocolate or chocolate curls for garnish
Instructions
- Preheat oven to 350°F (175°C). Prepare the brownie mix according to package instructions and bake in a 9-inch springform pan for 20-25 minutes. Let cool completely.
- In a large bowl, beat cream cheese and sour cream until smooth.
- In a separate bowl, whip heavy cream and powdered sugar until stiff peaks form. Fold the whipped cream and peppermint extract into the cream cheese mixture until fully combined.
- Spread the mint cream filling evenly over the cooled brownie base. Smooth the top and refrigerate for at least 4 hours (overnight for best results).
- Melt semi-sweet chocolate and butter together in a heatproof bowl in the microwave. Drizzle over the chilled cheesecake.
- Decorate with fresh mint leaves and chocolate curls. Slice and serve chilled.
Notes
Store leftovers in the refrigerator for up to 3-4 days, or freeze tightly wrapped for longer storage. Adjust mint flavor as desired.
