A delightful vegan dessert that combines creamy cheesecake with sweet and tart cherries, perfect for any occasion.


Ingredients

  • 1 cup almond flour
  • 1 cup pitted dates
  • 1 cup cashews (soaked for 4 hours)
  • 1/4 cup coconut cream
  • 1 tsp vanilla extract
  • 1/4 cup maple syrup
  • 1 cup fresh or canned cherries (pitted)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • Pinch of salt

Instructions

  1. In a food processor, blend almond flour and dates until a sticky dough forms. Press this mixture into the base of mini silicone molds to create a crust.
  2. In another bowl, blend soaked cashews, coconut cream, vanilla extract, and maple syrup until smooth. Pour this mixture over the crust in each mold.
  3. For the cherry topping, blend cherries, lemon juice, cornstarch, and a pinch of salt until smooth. Pour over the cheesecake layer.
  4. Freeze the bites for at least 4 hours or until solid.
  5. Once set, remove from molds and serve chilled.

Notes

These bites can be stored in an airtight container in the freezer for up to a month. Let them sit at room temperature for a few minutes before serving.
