Description
Mini Turtle Cheesecakes combine creamy cheesecake with caramel and pecans, making for a delightful bite-sized dessert.

- 1 cup chocolate graham cracker crumbles
- 3 tablespoons butter, melted
- 1 tablespoon brown sugar
- 8 oz cream cheese, softened
- 1/3 cup Greek yogurt
- 1 egg
- 1/4 cup sugar
- 3/4 teaspoon vanilla extract
- 2 tablespoons caramel sauce
- 1/2 cup pecans, chopped
- Additional chopped pecans for topping
- Caramel sauce for topping
- Chocolate sauce or melted chocolate chips for topping
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tray with 12 paper liners.
- In a bowl, mix together the chocolate graham cracker crumbles, melted butter, and brown sugar until well combined. Press 1 1/2 tablespoons of this mixture into the bottom of each muffin cup. Bake for 6 minutes, then let them cool.
- Optionally, add 1/2 teaspoon of caramel sauce and some chopped pecans on top of each crust.
- In another bowl, cream together the softened cream cheese and Greek yogurt. Mix in the egg, sugar, and vanilla until everything is combined.
- Spoon about 1 1/2 tablespoons of the cheesecake mixture over the caramel and pecans in each muffin cup. Bake for 18-20 minutes, or until they are set.
- Allow them to cool completely, then refrigerate for at least 4 hours or overnight.
- Before serving, top with additional pecans, caramel sauce, and chocolate sauce.
Notes
Serve chilled and add toppings just before serving for best taste.
