- 3 cups diced fresh strawberries
- 2 tbsp lemon juice
- 1/2 cup light brown sugar
- 2 tbsp cornstarch
- 1 tsp vanilla extract
- 1 1/4 cups graham cracker crumbs
- 1 1/2 tbsp sugar
- 1/4 cup unsalted butter, melted
- 1 cup all-purpose flour
- 1/2 cup light brown sugar
- 1/4 cup granulated sugar (optional)
- Dash of salt
- 6 tbsp unsalted butter, melted
- 12 oz cream cheese, softened
- 6 tbsp sugar
- 1 tbsp flour
- 1 1/2 tsp vanilla extract
- 1 egg, slightly beaten
Instructions
- In a heavy saucepan, combine half of the diced strawberries and lemon juice. Cook over medium-high heat for 5-6 minutes until the strawberries start to burst and juice forms. In a separate bowl, mix the brown sugar and cornstarch, stir into the strawberry mixture, add remaining strawberries, and cook for 2 minutes until thickened. Set aside to cool.
- Preheat your oven to 325°F (163°C). Line a cupcake pan with paper liners. In a bowl, stir together graham cracker crumbs and sugar, then mix in melted butter until the crumbs are moistened. Divide the mixture among the liners and press firmly into the bottom. Refrigerate to set.
- In a bowl, combine flour, sugar, and a dash of salt. Add the melted butter and mix until coarse crumbs form. Set aside for later.
- In a bowl, beat cream cheese, sugar, flour, and vanilla until smooth. Add the egg and mix until just combined. Spread the cheesecake mixture over the crusts, filling each about 2/3 full. Top with strawberry pie filling and sprinkle with streusel topping.
- Bake for 30-35 minutes or until set. Allow to cool in the pan for 20 minutes, then transfer to a wire rack to cool completely.
Notes
Store Mini Strawberry Cheesecakes in an airtight container in the refrigerator. Can be made ahead of time.
