Ingredients

  • 2 cups Oreo cookie crumbs
  • 2 tbsp granulated sugar
  • 6 tbsp salted butter, melted
  • 16 oz cream cheese, room temperature
  • 1 1/4 cups powdered sugar
  • 2 tsp vanilla extract
  • 1 1/4 cups heavy cream
  • 1 cup chopped Oreo cookies
  • 1/2 cup semisweet chocolate chips
  • 1/4 cup heavy cream
  • 3/4 cup heavy cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 2 tbsp Oreo cookie crumbs
  • 24 mini Oreo cookies

Instructions

  1. Prepare the Oreo Cookie Crust: Combine Oreo cookie crumbs, granulated sugar, and melted butter in a bowl. Press about 1 tablespoon of the mixture into mini cheesecake pans to form the crust. Set aside.
  2. Make the Cheesecake Filling: Cream the room temperature cream cheese, powdered sugar, and vanilla extract until smooth. Slowly add the heavy cream and whip until thick and fluffy. Gently fold in chopped Oreo cookies. Pipe the filling onto the crusts and chill for at least 12 hours.
  3. Prepare the Chocolate Ganache: Microwave semisweet chocolate chips and heavy cream in 15-second intervals until smooth. Let cool slightly.
  4. Whip the Cream: Whip heavy cream, powdered sugar, and vanilla extract until medium-stiff peaks form. Fill a piping bag fitted with a Wilton 1M tip.
  5. Assemble the Mini Cheesecakes: Remove cheesecakes from the pan. Spoon or pipe ganache on top, then pipe whipped cream, sprinkle with Oreo crumbs, and top with a mini Oreo.

Notes

Ensure cream cheese is at room temperature. Don’t skip the chilling time for best results.
