- 16 oz cream cheese, room temperature
- 1 1/4 cups powdered sugar
- 2 teaspoons vanilla extract
- 1 1/4 cups heavy cream
- 1 cup chopped Oreo cookies
- 1/2 cup semisweet chocolate chips
- 1/4 cup heavy cream
- 3/4 cup heavy cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- 2 tablespoons Oreo cookie crumbs (for garnish)
- 24 mini Oreo cookies (for garnish)
Instructions
- Prepare the Oreo Cookie Crust: In a mixing bowl, stir together the Oreo cookie crumbs, granulated sugar, and melted salted butter until well combined. Scoop into mini cheesecake pans and press firmly to form the crust.
- Make the Oreo Cheesecake Filling: Cream the cream cheese, powdered sugar, and vanilla extract until smooth. Add the heavy cream and whip until thick and fluffy. Fold in the chopped Oreo cookies.
- Fill the Cheesecake Pans: Pipe the cheesecake mixture onto the crusts, filling slightly above the top. Chill for 12 hours or overnight and then remove from pans.
- Prepare the Chocolate Ganache: Combine chocolate chips and heavy cream in a microwave-safe bowl. Heat in 15-second intervals until melted and smooth.
- Make the Whipped Cream: Whip the heavy cream, powdered sugar, and vanilla extract until medium-stiff peaks form and fill a piping bag with it.
- Assemble the Cheesecakes: Pipe chocolate ganache on top, add whipped cream, sprinkle with additional Oreo crumbs, and top with a mini Oreo for garnish.
Notes
Chill the cheesecakes overnight for the best results. Store leftovers in an airtight container in the refrigerator for up to one week.
