Description

Delightful Mini Oreo Cheesecakes are a combination of creamy cheesecake and crunchy Oreo flavors, perfect for parties and gatherings.


Ingredients

  • 2 cups Oreo cookie crumbs
  • 2 tablespoons granulated sugar
  • 6 tablespoons salted butter, melted
  • 16 oz cream cheese, room temperature
  • 1 1/4 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 1 1/4 cups heavy cream
  • 1 cup chopped Oreo cookies
  • 1/2 cup semisweet chocolate chips
  • 1/4 cup heavy cream
  • 3/4 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons Oreo cookie crumbs (for garnish)
  • 24 mini Oreo cookies (for garnish)

Instructions

  1. Prepare the Oreo Cookie Crust: In a mixing bowl, stir together the Oreo cookie crumbs, granulated sugar, and melted salted butter until well combined. Scoop into mini cheesecake pans and press firmly to form the crust.
  2. Make the Oreo Cheesecake Filling: Cream the cream cheese, powdered sugar, and vanilla extract until smooth. Add the heavy cream and whip until thick and fluffy. Fold in the chopped Oreo cookies.
  3. Fill the Cheesecake Pans: Pipe the cheesecake mixture onto the crusts, filling slightly above the top. Chill for 12 hours or overnight and then remove from pans.
  4. Prepare the Chocolate Ganache: Combine chocolate chips and heavy cream in a microwave-safe bowl. Heat in 15-second intervals until melted and smooth.
  5. Make the Whipped Cream: Whip the heavy cream, powdered sugar, and vanilla extract until medium-stiff peaks form and fill a piping bag with it.
  6. Assemble the Cheesecakes: Pipe chocolate ganache on top, add whipped cream, sprinkle with additional Oreo crumbs, and top with a mini Oreo for garnish.

Notes

Chill the cheesecakes overnight for the best results. Store leftovers in an airtight container in the refrigerator for up to one week.
