Ingredients

  • 2 teaspoons vanilla extract

  • 1 cup chopped Oreo cookies
  • 1/2 cup semisweet chocolate chips
  • 1/4 cup heavy cream (for ganache)
  • 3/4 cup heavy cream (for whipped cream)
  • 2 tablespoons powdered sugar (for whipped cream)
  • 1/2 teaspoon vanilla extract (for whipped cream)
  • 2 tablespoons Oreo cookie crumbs (for garnish)
  • 24 mini Oreo cookies (for garnish)

Instructions

  1. Prepare the Oreo Cookie Crust: In a mixing bowl, stir together the Oreo cookie crumbs, granulated sugar, and melted salted butter until well combined. Press the mixture into mini cheesecake pans.
  2. Make the Oreo Cheesecake Filling: Cream together the cream cheese, powdered sugar, and vanilla extract until smooth. Add the heavy cream and whip until thick and fluffy. Fold in the chopped Oreo cookies.
  3. Fill the Cheesecake Pans: Pipe the cheesecake mixture onto the crusts, filling slightly above the top. Chill for 12 hours or overnight, then remove from the pan.
  4. Prepare the Chocolate Ganache: Combine chocolate chips and heavy cream in a microwave-safe bowl and heat until melted and smooth.
  5. Make the Whipped Cream: Whip heavy cream, powdered sugar, and vanilla until medium-stiff peaks form. Fill a piping bag with the whipped cream.
  6. Assemble the Cheesecakes: Pipe ganache on top of each cheesecake, followed by a swirl of whipped cream. Top each with additional crumbs and a mini Oreo.
