Description

Delicious mini pies combining creamy peanut butter and rich chocolate, perfect for any occasion.

Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream for ganache
  • Chocolate chips for garnish (optional)

Instructions

  1. Prepare the Crust: In a bowl, mix graham cracker crumbs and melted butter. Press this mixture into a muffin tin lined with paper liners. Chill in the refrigerator for 30 minutes.
  2. Make the Peanut Butter Filling: Beat together cream cheese and peanut butter until smooth. Add powdered sugar, vanilla, and salt, and mix well.
  3. Whip the Cream: In a separate bowl, whip heavy cream until stiff peaks form. Gently fold this whipped cream into the peanut butter mixture.
  4. Fill the Crusts: Spoon the filling into the chilled crusts and smooth the tops.
  5. Prepare the Chocolate Ganache: Heat 1/2 cup of heavy cream until it simmers. Stir in the chocolate chips until melted and the mixture is smooth.
  6. Top with Ganache: Pour the ganache over each mini pie, spreading it evenly.
  7. Chill and Serve: Place the pies in the refrigerator for at least 2 hours. Before serving, you can garnish with extra chocolate chips if desired.

Notes
