Mini Caramel Apple Cheesecakes combine rich cheesecake flavors with sweet caramel and tart apples, perfect for any gathering.

- 1 cup graham cracker crumbs
- 2 tablespoons granulated sugar
- 4 tablespoons unsalted butter, melted
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1 tablespoon all-purpose flour
- 1 medium apple, peeled, cored, and diced
- 1/2 teaspoon ground cinnamon
- 1 tablespoon brown sugar
- 1/2 cup caramel sauce
Instructions
- Preheat your oven to 325°F (160°C) and line a muffin tin with paper liners.
- In a small bowl, mix together graham cracker crumbs, 2 tablespoons of sugar, and melted butter to make the crust. Press this mixture into the bottom of each muffin liner and bake for 5 minutes.
- In a large mixing bowl, beat the softened cream cheese with 1/4 cup sugar until smooth. Add the egg, vanilla extract, sour cream, and flour. Mix until well combined.
- Divide the cheesecake filling over the pre-baked crusts and bake for 20-25 minutes until set and slightly golden. Allow to cool completely in the tin.
- In a skillet, cook the diced apple with cinnamon and brown sugar over medium heat for about 5 minutes until tender. Let cool.
- Once cooled, top each cheesecake with caramel sauce and a spoonful of the apple mixture.
- Chill for at least 1 hour before serving.
Notes
Make sure to use room temperature cream cheese for a smooth mix. You can use plain yogurt instead of sour cream if needed.
