Delightful light and airy mini popovers topped with sweet and tangy jammy strawberries.

- 14 teaspoons + 4 tablespoons Salted butter (divided)
- 1 1/2 cups Whole milk, at room temperature
- 3 large Eggs, at room temperature
- 1 tablespoon Salted butter, melted
- 1 teaspoon Vanilla extract
- 1 1/2 cups All-purpose flour
- 1 teaspoon Kosher salt
- 1/3 cup Granulated sugar
- 2–3 teaspoons Lemon zest
- 1/4 teaspoon Vanilla bean powder (optional)
- 2 cups Strawberries, sliced
- 1 tablespoon Granulated sugar
- 2 tablespoons Strawberry jam
- 1 tablespoon St. Germain (elderflower liquor) (optional)
Instructions
- Preheat the oven to 450°F (232°C) and prepare a 12-cup muffin pan by adding 1 teaspoon of butter to each cup. Place the pan in the oven for 3-5 minutes to heat.
- In a medium bowl, whisk together the milk and eggs until frothy. Add the melted butter, vanilla extract, flour, and salt. Whisk until just combined.
- Carefully remove the hot muffin pan from the oven. Swirl the melted butter to coat the cups, then fill each cup with batter about 3/4 full.
- Bake for 15-18 minutes until the popovers are puffed and golden brown.
- In a skillet, melt 4 tablespoons of butter over medium heat until it turns brown and becomes nutty, about 3-4 minutes.
- To make the lemon sugar, mix the sugar, lemon zest, and vanilla powder in a shallow bowl.
- Toss the sliced strawberries with 1 tablespoon of sugar, strawberry jam, and St. Germain (if using). Let them sit for 5-10 minutes.
- Brush the warm popovers with browned butter, roll them in lemon sugar, and top with the jammy strawberries. Enjoy your warm popovers!
