Description

Delightful mini popovers made with brown butter and topped with sweet, jammy strawberries. Perfect for breakfast, brunch, or dessert.


Ingredients

  • 14 teaspoons + 4 tablespoons Salted butter (divided)
  • 1 1/2 cups Whole milk, at room temperature
  • 3 large Eggs, at room temperature
  • 1 tablespoon Salted butter, melted
  • 1 teaspoon Vanilla extract
  • 1 1/2 cups All-purpose flour
  • 1 teaspoon Kosher salt
  • 1/3 cup Granulated sugar
  • 23 teaspoons Lemon zest
  • 1/4 teaspoon Vanilla bean powder (optional)
  • 2 cups Strawberries, sliced
  • 1 tablespoon Granulated sugar
  • 2 tablespoons Strawberry jam
  • 1 tablespoon St. Germain (elderflower liquor) (optional)

Instructions

  1. Preheat the oven to 450°F (232°C). Place 1 teaspoon of butter in each cup of a 12-cup muffin pan and melt in the oven for 3-5 minutes.
  2. In a medium bowl, whisk together milk and eggs until frothy. Add melted butter, vanilla extract, flour, and salt, whisking until just combined.
  3. Remove the hot pan from the oven, swirl melted butter around to coat each cup, and fill with batter about 3/4 full. Bake for 15-18 minutes until puffed and golden.
  4. In a skillet, melt 4 tablespoons of butter over medium heat until golden brown, about 3-4 minutes. Remove from heat.
  5. In a shallow bowl, combine sugar, lemon zest, and vanilla powder (if using).
  6. Toss sliced strawberries with 1 tablespoon sugar, strawberry jam, and St. Germain (if using). Let sit for 5-10 minutes.
  7. Brush warm popovers with browned butter, roll in lemon sugar, and top with jammy strawberries. Serve warm.

Notes

For best results, use room temperature ingredients and ensure the muffin pan is hot and well-greased. Do not open the oven door while baking.
