Ingredients

  • 6 oz blackberries, pureed and strained
  • 5 tbsp sugar (for topping)
  • 2 1/2 tsp cornstarch
  • 3/4 cup graham cracker crumbs
  • 2 tbsp sugar (for crust)
  • 3 tbsp butter, melted
  • 12 oz cream cheese, room temperature
  • 1/2 cup sugar (for filling)
  • 1 1/2 tbsp flour
  • 1/4 cup sour cream
  • 2 tsp lavender extract
  • 1/2 tsp vanilla extract
  • 2 large eggs, room temperature
  • 1/2 cup heavy whipping cream, cold
  • 4 tbsp powdered sugar
  • 1/2 tsp vanilla extract (for whipped cream)
  • 1214 blackberries (for garnish)

Instructions

  1. Prepare the Blackberry Topping: Puree the blackberries in a food processor. In a medium saucepan, combine the puree, sugar, and cornstarch. Cook over medium-low heat until thickened. Allow the mixture to cool.
  2. Prepare the Crust: Preheat the oven to 325°F (162°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press this mixture into cupcake liners and bake for 5 minutes.
  3. Prepare the Lavender Cheesecake Filling: In another bowl, beat the cream cheese, sugar, and flour until smooth. Add the sour cream, lavender extract, and vanilla. Mix in the eggs one at a time.
  4. Fill Cups: Divide the cheesecake filling among the crusts. Bake for 18-20 minutes. Cool in the oven for 10 minutes, then let them cool completely in the refrigerator.
  5. Assemble: Top the cooled cheesecakes with the blackberry topping, then pipe whipped cream made from heavy cream, powdered sugar, and vanilla onto the cheesecakes. Garnish with fresh blackberries.

Notes

For more intense floral flavor, you can adjust the lavender extract amount, but use with caution.
