Description

Delightful biscuits combining rich coconut flavor with a soft, buttery texture, perfect for tea time or sharing.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup desiccated coconut
  • 1/4 cup granulated sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk (or as needed for consistency)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the all-purpose flour, desiccated coconut, granulated sugar, baking powder, and salt.
  3. Add the softened butter to the dry ingredients and mix until the mixture resembles breadcrumbs.
  4. Pour in the sweetened condensed milk, vanilla extract, and a tablespoon of milk. Mix everything together until a soft dough forms. Adjust consistency with more milk if needed.
  5. Roll the dough into small balls and flatten them gently.
  6. Place the biscuits on the prepared baking sheet, leaving space between each one.
  7. Bake for 12-15 minutes, or until the edges are lightly golden.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
