Description

A rich chocolate cake layered with fresh mango and chocolate frosting, perfect for special occasions.


Ingredients

  • 1 cup unsalted butter
  • 2 cups sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 2 ripe mangoes (diced)
  • 1 cup chocolate frosting (for layering)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In a separate bowl, combine the flour, cocoa powder, baking powder, and salt. Gradually stir the dry ingredients into the wet mixture.
  5. Fold in the chocolate chips.
  6. Pour half of the batter into one prepared cake pan and the other half into the second pan.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  9. Once cooled, layer the cakes by placing one on a serving plate, spreading a layer of chocolate frosting and diced mango on top, then placing the second cake on top.
  10. Frost the top and sides of the cake as desired and garnish with additional mango.
  11. Slice and serve to enjoy the indulging flavors!

Notes

Serve at room temperature, pair with vanilla ice cream, and store leftovers in an airtight container.
