A rich chocolate cake layered with fresh mango and chocolate frosting, perfect for special occasions.

- 1 cup unsalted butter
- 2 cups sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 2 ripe mangoes (diced)
- 1 cup chocolate frosting (for layering)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla.
- In a separate bowl, combine the flour, cocoa powder, baking powder, and salt. Gradually stir the dry ingredients into the wet mixture.
- Fold in the chocolate chips.
- Pour half of the batter into one prepared cake pan and the other half into the second pan.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- Once cooled, layer the cakes by placing one on a serving plate, spreading a layer of chocolate frosting and diced mango on top, then placing the second cake on top.
- Frost the top and sides of the cake as desired and garnish with additional mango.
- Slice and serve to enjoy the indulging flavors!
Notes
Serve at room temperature, pair with vanilla ice cream, and store leftovers in an airtight container.
