Description
A delightful one-pan dish featuring juicy chicken breasts topped with creamy mozzarella and fresh basil pesto, accompanied by sweet cherry tomatoes.
Ingredients

- 2 boneless chicken breasts
- 1 tbsp olive oil
- Salt to taste
- Black pepper to taste
- Garlic powder to taste
- 4 slices of fresh mozzarella or shredded mozzarella
- 1/4 cup cherry tomatoes, halved
- 2 tbsp basil pesto
- Fresh basil, chopped for garnish
Instructions
- Season the chicken breasts with salt, black pepper, and garlic powder.
- Heat the olive oil in a skillet over medium heat and sear the chicken for 5–6 minutes on each side until golden and cooked through.
- Lower the heat and place the fresh mozzarella on top of each chicken breast. Cover the skillet and let the cheese melt.
- Once the cheese is melted, spoon the basil pesto over the top of the chicken.
- Sprinkle the halved cherry tomatoes and a pinch of salt on top of the chicken.
- Add chopped basil for garnish and serve hot.
Notes
This dish pairs well with rice, pasta, or roasted veggies. Store leftovers in an airtight container in the fridge for up to 3 days.
