Description

Delightful Meltaway Brownie Cookies combine the rich, fudgy texture of brownies with the convenience of cookies.


Ingredients

  • 1/2 cup (115g) unsalted butter
  • 1 cup (170g) semi-sweet chocolate chips
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Powdered sugar for dusting (optional)
  • Chocolate ganache drizzle (optional)

Instructions

  1. In a heatproof bowl, combine the butter and chocolate chips. Melt them over a double boiler or in the microwave in 20-second increments, stirring until smooth. Set aside to cool slightly.
  2. In another large bowl, beat together the granulated sugar, brown sugar, and eggs until the mixture is light and fluffy, about 2 minutes. Add the vanilla extract and the slightly cooled chocolate mixture, mixing well.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix.
  4. Cover the dough with plastic wrap and refrigerate it for at least 1 hour.
  5. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper. Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  6. Bake for 8-10 minutes, or until the edges are set but the centers are still soft. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
  7. Dust cooled cookies with powdered sugar and drizzle with chocolate ganache, if desired.

Notes

Ensure butter and chocolate are not too hot to avoid cooking the eggs. Chill the dough for better shape during baking.
