A delightful twist on classic comfort food, this meatloaf combines ground chicken with garlic and Parmesan cheese for a moist, flavorful dish.


Ingredients

  • 2 lbs ground chicken
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 egg
  • 3 cloves garlic, minced
  • 1/4 cup finely chopped parsley (plus more for garnish)
  • 1 tsp onion powder
  • Salt & pepper, to taste
  • 3 tbsp butter (for glaze)
  • 2 cloves garlic, minced (for glaze)
  • 1/3 cup grated Parmesan (for glaze)
  • 1 tbsp flour (for glaze)
  • 1/2 cup chicken broth (for glaze)
  • Salt & pepper, to taste (for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, egg, minced garlic, chopped parsley, onion powder, salt, and pepper. Mix until well blended.
  3. Form the mixture into a loaf shape and place it on a lined baking sheet or in a loaf pan.
  4. Bake the meatloaf for 45–50 minutes, or until the internal temperature reaches 165°F (74°C).
  5. In a saucepan, melt the butter over medium heat. Add the minced garlic, then whisk in the flour. Stir in the chicken broth and Parmesan cheese and let it simmer until slightly thickened.
  6. Pour the garlic Parmesan glaze over the meatloaf and broil on high for 2–3 minutes to achieve a golden top. Garnish with more chopped parsley before serving.

Notes

For a healthier twist, substitute half the ground chicken with grated zucchini or shredded carrots. Serve with mashed potatoes or a side salad.
