- 2 lbs ground chicken
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1 egg
- 3 cloves garlic, minced
- 1/4 cup finely chopped parsley (plus more for garnish)
- 1 tsp onion powder
- Salt & pepper, to taste
- 3 tbsp butter (for glaze)

- 1 tbsp flour (for glaze)
- 1/2 cup chicken broth (for glaze)
- Salt & pepper, to taste (for glaze)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, egg, minced garlic, chopped parsley, onion powder, salt, and pepper. Mix until well blended.
- Form the mixture into a loaf shape and place it on a lined baking sheet or in a loaf pan.
- Bake the meatloaf for 45–50 minutes, or until the internal temperature reaches 165°F (74°C).
- In a saucepan, melt the butter over medium heat. Add the minced garlic, then whisk in the flour. Stir in the chicken broth and Parmesan cheese and let it simmer until slightly thickened.
- Pour the garlic Parmesan glaze over the meatloaf and broil on high for 2–3 minutes to achieve a golden top. Garnish with more chopped parsley before serving.
Notes
For a healthier twist, substitute half the ground chicken with grated zucchini or shredded carrots. Serve with mashed potatoes or a side salad.
