Ingredients

  • 1 cup (226g) unsalted butter, softened
  • 1/2 cup (100g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (220g) all-purpose flour
  • 1/4 cup (30g) cornstarch
  • 1/4 teaspoon salt
  • Optional: Granulated sugar for coating

Instructions

  1. In a bowl, beat the softened butter and powdered sugar together until light and fluffy. Add the vanilla extract and mix well.
  2. In another bowl, sift together the all-purpose flour, cornstarch, and salt. Gradually add this dry mixture to the butter mixture and mix until a soft dough forms.
  3. Shape the dough into a log, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  4. Preheat your oven to 325°F (160°C). Slice the chilled dough into 1/2-inch rounds and place them on a lined baking sheet.
  5. Bake for 12–15 minutes, or until the edges are slightly golden.

Notes

These cookies can be refrigerated for up to a week or frozen for up to three months.
