Ingredients

- 1 cup (226g) unsalted butter, softened
- 1/2 cup (100g) powdered sugar
- 1 teaspoon vanilla extract
- 1 3/4 cups (220g) all-purpose flour
- 1/4 cup (30g) cornstarch
- 1/4 teaspoon salt
- Optional: Granulated sugar for coating
Instructions
- In a bowl, beat the softened butter and powdered sugar together until light and fluffy. Add the vanilla extract and mix well.
- In another bowl, sift together the all-purpose flour, cornstarch, and salt. Gradually add this dry mixture to the butter mixture and mix until a soft dough forms.
- Shape the dough into a log, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.
- Preheat your oven to 325°F (160°C). Slice the chilled dough into 1/2-inch rounds and place them on a lined baking sheet.
- Bake for 12–15 minutes, or until the edges are slightly golden.
Notes
These cookies can be refrigerated for up to a week or frozen for up to three months.
