Description

A delicious and healthy frittata featuring fresh vegetables and cheese, perfect for any meal of the day.


Ingredients

  • 6 large eggs
  • 1/2 cup milk (or heavy cream)
  • 1 medium zucchini, sliced into thin rounds
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, whisk the eggs and milk (or cream) together until well combined.
  3. Stir in the zucchini, cherry tomatoes, feta cheese, and Parmesan cheese.
  4. Pour the mixture into a greased oven-safe skillet.
  5. Cook on the stovetop over medium heat for about 5-7 minutes until the edges begin to set.
  6. Transfer the skillet to the oven and bake for another 15-20 minutes or until the frittata is fully set and lightly golden on top.
  7. Remove from the oven, allow to cool slightly, then slice and serve warm.

Notes

This dish can be served warm or at room temperature. Store leftovers in an airtight container for up to 3 days.
