Ingredients

- 3 medium zucchinis, sliced into 1⁄2-inch rounds
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1 cup marinara sauce
- 1 cup mozzarella cheese, shredded
- 1/4 cup olives, sliced
- 1/4 cup bell peppers, diced
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix olive oil, Italian seasoning, garlic powder, salt, and pepper.
- Brush the zucchini rounds with the olive oil mixture.
- Place the zucchini rounds on a baking sheet lined with parchment paper.
- Top each zucchini round with a spoonful of marinara sauce, followed by shredded mozzarella, olives, and bell peppers.
- Bake for about 15-20 minutes or until the cheese is melted and bubbly.
- Remove from the oven and let cool slightly before serving.
Notes
Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat in the oven or microwave.
