Description

Tasty and healthy zucchini cups topped with marinara, cheese, and fresh vegetables, perfect for a snack or light meal.


Ingredients

  • 3 medium zucchinis, sliced into 1⁄2-inch rounds
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup olives, sliced
  • 1/4 cup bell peppers, diced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix olive oil, Italian seasoning, garlic powder, salt, and pepper.
  3. Brush the zucchini rounds with the olive oil mixture.
  4. Place the zucchini rounds on a baking sheet lined with parchment paper.
  5. Top each zucchini round with a spoonful of marinara sauce, followed by shredded mozzarella, olives, and bell peppers.
  6. Bake for about 15-20 minutes or until the cheese is melted and bubbly.
  7. Remove from the oven and let cool slightly before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat in the oven or microwave.
