Instructions
- In a bowl, mix the grated zucchini, oatmeal, eggs, and chopped onion until well combined.
- Form the mixture into cutlet shapes.
- Heat a non-stick skillet over medium heat and add a little oil.
- Cook each cutlet for about 3-4 minutes on each side, or until golden brown.
- Serve warm with your favorite dipping sauce.
Notes
Squeeze out as much water from the zucchini as possible to avoid soggy cutlets. Customizations and additional herbs can enhance flavor.
