Description

Ingredients

  • 3 medium zucchinis, grated
  • 3 garlic cloves, minced
  • 1/2 cup crumbled feta cheese (optional for non-vegan)
  • 1/2 cup breadcrumbs
  • 2 large eggs (or flax eggs for vegan)
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Grate the zucchinis and place them in a clean towel; squeeze out excess moisture.
  2. In a large bowl, combine grated zucchini, minced garlic, crumbled feta cheese, breadcrumbs, eggs, salt, and pepper.
  3. Mix until well combined.
  4. Heat olive oil in a skillet over medium heat.
  5. Use a spoon to scoop the mixture and form small patties.
  6. Fry the patties in the skillet for 3-4 minutes on each side until golden brown.
  7. Remove from skillet and place on paper towels to drain excess oil.
  8. Serve warm.
