Ingredients

- 3 medium zucchinis, grated
- 3 garlic cloves, minced
- 1/2 cup crumbled feta cheese (optional for non-vegan)
- 1/2 cup breadcrumbs
- 2 large eggs (or flax eggs for vegan)
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Grate the zucchinis and place them in a clean towel; squeeze out excess moisture.
- In a large bowl, combine grated zucchini, minced garlic, crumbled feta cheese, breadcrumbs, eggs, salt, and pepper.
- Mix until well combined.
- Heat olive oil in a skillet over medium heat.
- Use a spoon to scoop the mixture and form small patties.
- Fry the patties in the skillet for 3-4 minutes on each side until golden brown.
- Remove from skillet and place on paper towels to drain excess oil.
- Serve warm.
Notes
Squeeze out as much moisture from the grated zucchini as possible for crispiness. Experiment with herbs like dill or parsley for added flavor.
