- 4 medium zucchinis, sliced into thin rounds
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/3 cup sun-dried tomatoes, chopped (oil-packed, drained)
- 1 cup stuffing mix
- 1 cup vegetable broth
- 1/2 cup feta cheese, crumbled
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine sliced zucchinis, chopped onion, minced garlic, and sun-dried tomatoes.
- In another bowl, mix the stuffing mix with vegetable broth and let it sit for a few minutes until the broth is absorbed.
- Add the stuffing mixture to the zucchini mixture.
- Stir in feta cheese, oregano, salt, and pepper until well combined.
- Transfer the mixture to a greased casserole dish.
- Bake for about 30-35 minutes or until the zucchini is tender and the top is slightly golden.
- Let it cool for a few minutes before serving.
Notes
For added flavor, try adding spices such as thyme or basil. You can substitute the feta cheese with goat cheese or mozzarella for a different taste. For a bit of crunch, top the casserole with breadcrumbs or crushed nuts before baking.
