Ingredients

- 4 medium zucchinis, sliced into thin rounds
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/3 cup sun-dried tomatoes, chopped (oil-packed, drained)
- 1 cup stuffing mix
- 1 cup vegetable broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, sauté the chopped onion and minced garlic until soft.
- Add the sliced zucchini and cook for another 5 minutes.
- Stir in the sun-dried tomatoes, Italian seasoning, salt, and pepper.
- In a large bowl, combine the stuffing mix and vegetable broth, then fold in the zucchini mixture.
- Transfer the mixture to a greased casserole dish and spread evenly.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and the casserole is heated through.
- Let it cool slightly before serving.
Notes
For added flavor, use flavored vegetable broth or add grated cheese on top before baking. You can also add breadcrumbs for a crunchier topping.
