A delicious and comforting casserole combining fresh zucchini, sun-dried tomatoes, and savory stuffing mix.


Ingredients

  • 4 medium zucchinis, sliced into thin rounds
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (oil-packed, drained)
  • 1 cup stuffing mix
  • 1 cup vegetable broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, sauté the chopped onion and minced garlic until soft.
  3. Add the sliced zucchini and cook for another 5 minutes.
  4. Stir in the sun-dried tomatoes, Italian seasoning, salt, and pepper.
  5. In a large bowl, combine the stuffing mix and vegetable broth, then fold in the zucchini mixture.
  6. Transfer the mixture to a greased casserole dish and spread evenly.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden and the casserole is heated through.
  8. Let it cool slightly before serving.

Notes

For added flavor, use flavored vegetable broth or add grated cheese on top before baking. You can also add breadcrumbs for a crunchier topping.
