- 4 medium zucchinis, sliced into thin rounds
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/3 cup sun-dried tomatoes, chopped (oil-packed, drained)
- 1 cup stuffing mix
- 1 cup vegetable broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat some olive oil over medium heat. Sauté the chopped onion and minced garlic until translucent.
- Add the sliced zucchinis and sun-dried tomatoes. Cook for about 5 minutes until the zucchinis begin to soften.
- In a large bowl, combine the stuffing mix, vegetable broth, Italian seasoning, salt, and pepper.
- Add the sautéed mixture to the bowl and stir until well combined.
- Transfer the mixture to a greased baking dish. Sprinkle the top with grated Parmesan and shredded mozzarella cheese.
- Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and golden.
- Let cool for a few minutes before serving. Enjoy!
Notes
This casserole is best served warm. Consider adding fresh herbs for enhanced flavor.
