Ingredients

  • 4 medium zucchinis, sliced into thin rounds
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (oil-packed, drained)
  • 1 cup stuffing mix
  • 1 cup vegetable broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat some olive oil over medium heat. Sauté the chopped onion and minced garlic until translucent.
  3. Add the sliced zucchinis and sun-dried tomatoes. Cook for about 5 minutes until the zucchinis begin to soften.
  4. In a large bowl, combine the stuffing mix, vegetable broth, Italian seasoning, salt, and pepper.
  5. Add the sautéed mixture to the bowl and stir until well combined.
  6. Transfer the mixture to a greased baking dish. Sprinkle the top with grated Parmesan and shredded mozzarella cheese.
  7. Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and golden.
  8. Let cool for a few minutes before serving. Enjoy!
