- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon kosher salt
- 2 cups cooked shredded chicken
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- Juice of 1 lemon
- Fresh parsley and feta cheese for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and cook until softened, about 5 minutes.
- Stir in minced garlic and kosher salt, cooking for an additional minute.
- Add the cooked chicken, white beans, diced tomatoes, chicken broth, cumin, oregano, black pepper, and cayenne pepper.
- Bring to a simmer and cook for 20-25 minutes.
- Stir in lemon juice and adjust seasoning if needed.
- Garnish with fresh parsley and feta cheese before serving.
Notes
For a creamier texture, blend a portion of the chili before serving. You can also add more vegetables like spinach or bell peppers.
