Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 2 cups cooked shredded chicken
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • Juice of 1 lemon
  • Fresh parsley and feta cheese for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until softened, about 5 minutes.
  3. Stir in minced garlic and kosher salt, cooking for an additional minute.
  4. Add the cooked chicken, white beans, diced tomatoes, chicken broth, cumin, oregano, black pepper, and cayenne pepper.
  5. Bring to a simmer and cook for 20-25 minutes.
  6. Stir in lemon juice and adjust seasoning if needed.
  7. Garnish with fresh parsley and feta cheese before serving.

Notes

For a creamier texture, blend a portion of the chili before serving. You can also add more vegetables like spinach or bell peppers.
