Description

Ingredients

  • 1 lb ground beef (or beef stew meat, cubed)
  • 1 medium yellow onion, chopped
  • 23 garlic cloves, minced
  • 2 cups diced potatoes
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup green beans, chopped
  • 1 cup carrots, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef or cubed beef over medium heat. Drain excess fat if necessary.
  2. Add the chopped onion and minced garlic. Cook until the onion is translucent.
  3. Stir in the diced potatoes, beef broth, diced tomatoes, green beans, and carrots.
  4. Add oregano, basil, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for about 30-40 minutes, or until the vegetables are tender.
  6. Adjust seasoning as needed and serve hot.

Notes

Serve with fresh herbs and a slice of crusty bread for a complete meal. Can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
