Ingredients

- 1 lb ground beef (or beef stew meat, cubed)
- 1 medium yellow onion, chopped
- 2–3 garlic cloves, minced
- 2 cups diced potatoes
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup green beans, chopped
- 1 cup carrots, sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef or cubed beef over medium heat. Drain excess fat if necessary.
- Add the chopped onion and minced garlic. Cook until the onion is translucent.
- Stir in the diced potatoes, beef broth, diced tomatoes, green beans, and carrots.
- Add oregano, basil, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 30-40 minutes, or until the vegetables are tender.
- Adjust seasoning as needed and serve hot.
Notes
Serve with fresh herbs and a slice of crusty bread for a complete meal. Can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
