Description
A smooth and rich shrimp bisque that combines the flavors of the sea with fresh vegetables, perfect for cozy dinners or special occasions.
Ingredients

- 500 g shrimp, peeled and deveined (reserve shells for stock)
- 1 tbsp olive oil
- 1 tbsp unsalted butter
- 1 medium onion, chopped
- 2 cups diced tomatoes
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 4 cups seafood stock (or water)
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- In a large pot, heat olive oil and butter over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in garlic and cook for another minute.
- Add diced tomatoes and red bell pepper, cooking until soft.
- Pour in the seafood stock and bring to a simmer.
- Add reserved shrimp shells to infuse more flavor and let simmer for 20 minutes.
- Remove shells and blend the mixture until smooth.
- Return to the pot, add shrimp, and cook until shrimp are opaque.
- Season with salt and pepper, then serve hot, garnished with fresh herbs.
Notes
For a creamier bisque, you may add a splash of heavy cream at the end. Store leftovers in an airtight container in the refrigerator for up to 3 days.
