Description

A smooth and rich shrimp bisque that combines the flavors of the sea with fresh vegetables, perfect for cozy dinners or special occasions.


Ingredients

  • 500 g shrimp, peeled and deveined (reserve shells for stock)
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 medium onion, chopped
  • 2 cups diced tomatoes
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 4 cups seafood stock (or water)
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. In a large pot, heat olive oil and butter over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in garlic and cook for another minute.
  4. Add diced tomatoes and red bell pepper, cooking until soft.
  5. Pour in the seafood stock and bring to a simmer.
  6. Add reserved shrimp shells to infuse more flavor and let simmer for 20 minutes.
  7. Remove shells and blend the mixture until smooth.
  8. Return to the pot, add shrimp, and cook until shrimp are opaque.
  9. Season with salt and pepper, then serve hot, garnished with fresh herbs.

Notes

For a creamier bisque, you may add a splash of heavy cream at the end. Store leftovers in an airtight container in the refrigerator for up to 3 days.
