Ingredients

- 1 large head of cauliflower, cut into florets
- 2 tablespoons olive oil (plus more for drizzling)
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
Instructions
- Heat olive oil in a pot over medium heat.
- Add the chopped onion and sauté until translucent.
- Add minced garlic and sauté for another minute.
- Add cauliflower florets and enough water or vegetable broth to cover the cauliflower.
- Bring to a boil, then reduce heat and simmer until the cauliflower is tender, about 15-20 minutes.
- Use an immersion blender to puree the soup until smooth.
- Drizzle with additional olive oil before serving.
Notes
For a creamier soup, add a splash of coconut milk or almond milk before blending. You can also spice it up with red pepper flakes or cayenne pepper.
