Description

A warm and creamy soup that brings Mediterranean flavors to your kitchen, perfect for a healthy meal any time of the year.


Ingredients

  • 1 large head of cauliflower, cut into florets
  • 2 tablespoons olive oil (plus more for drizzling)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Add minced garlic and sauté for another minute.
  4. Add cauliflower florets and enough water or vegetable broth to cover the cauliflower.
  5. Bring to a boil, then reduce heat and simmer until the cauliflower is tender, about 15-20 minutes.
  6. Use an immersion blender to puree the soup until smooth.
  7. Drizzle with additional olive oil before serving.

Notes

For a creamier soup, add a splash of coconut milk or almond milk before blending. You can also spice it up with red pepper flakes or cayenne pepper.
