Description
Delightful and hearty Mediterranean stuffed potato cups filled with seasoned ground meat, fresh tomatoes, and topped with cheese.
Ingredients

- 6 medium potatoes (Yukon Gold or red potatoes), peeled
- 2 tbsp olive oil
- Salt & pepper, to taste
- 1/2 tsp paprika (optional)
- 1 lb ground meat (beef, lamb, or chicken)
- 1 cup chopped onions
- 2 cloves garlic, minced
- 1 cup diced tomatoes
- 1 tsp dried oregano
- 1 cup shredded cheese (feta or mozzarella)
- Fresh herbs (parsley or cilantro) for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the potatoes in half and scoop out some of the insides to create cups.
- Brush the potato cups with olive oil and season with salt, pepper, and paprika.
- Bake the potato cups in the preheated oven for about 25 minutes or until they are tender.
- In a skillet, heat a little olive oil over medium heat. Add the onions and garlic, and sauté until soft.
- Add the ground meat to the skillet; cook until browned.
- Stir in diced tomatoes, oregano, and season with salt and pepper. Cook for another 5-7 minutes.
- Remove the potato cups from the oven and fill them with the meat mixture.
- Top each filled cup with shredded cheese.
- Return to the oven for an additional 10 minutes until the cheese is melted.
- Garnish with fresh herbs before serving.
Notes
Feel free to use different types of cheese and mix in vegetables for added flavor.
