A delicious and nutritious dish combining colorful bell peppers filled with a savory mixture of ground beef, rice, and spices.

- 6 bell peppers (any color), tops cut off & seeds removed
- 2 tbsp olive oil
- 1 lb ground beef (or lamb for richer flavor)
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1 cup cooked rice
- 1 can (14 oz) diced tomatoes
- 1 tsp dried oregano
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the ground beef (or lamb) and cook until browned. Drain excess fat if necessary.
- Stir in the cooked rice, diced tomatoes, oregano, salt, and pepper. Mix well and cook for another 5 minutes.
- Stuff the mixture into each bell pepper, packing it in tightly. Place the stuffed peppers upright in a baking dish.
- If desired, sprinkle shredded cheese on top of each stuffed pepper.
- Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes.
- Remove the foil and bake for an additional 10 minutes until the peppers are tender and the cheese is melted.
- Serve warm and enjoy your Mediterranean style stuffed peppers!
Notes
For extra flavor, add diced olives or capers to the stuffing mixture. You can also use turkey or chicken for a lighter version.
