Mediterranean Style Stuffed Peppers with Ground Beef and Rice

Description

A delicious and nutritious dish combining colorful bell peppers filled with a savory mixture of ground beef, rice, and spices.


Ingredients

  • 6 bell peppers (any color), tops cut off & seeds removed
  • 2 tbsp olive oil
  • 1 lb ground beef (or lamb for richer flavor)
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup cooked rice
  • 1 can (14 oz) diced tomatoes
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  3. Add the ground beef (or lamb) and cook until browned. Drain excess fat if necessary.
  4. Stir in the cooked rice, diced tomatoes, oregano, salt, and pepper. Mix well and cook for another 5 minutes.
  5. Stuff the mixture into each bell pepper, packing it in tightly. Place the stuffed peppers upright in a baking dish.
  6. If desired, sprinkle shredded cheese on top of each stuffed pepper.
  7. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes.
  8. Remove the foil and bake for an additional 10 minutes until the peppers are tender and the cheese is melted.
  9. Serve warm and enjoy your Mediterranean style stuffed peppers!

Notes

For extra flavor, add diced olives or capers to the stuffing mixture. You can also use turkey or chicken for a lighter version.
