Description

A delicious and nutritious dish combining creamy cheese and fresh spinach, perfect for busy weeknights or special occasions.


Ingredients

  • 4 boneless chicken thighs
  • 1 cup spinach, sautéed then cooled and chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup shredded mozzarella cheese
  • 1 tsp garlic powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the sautéed spinach, cream cheese, mozzarella cheese, and garlic powder until well combined.
  3. Take each chicken thigh and create a pocket by slicing it through the side.
  4. Stuff each thigh with the spinach and cheese mixture.
  5. Place the stuffed chicken thighs in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  6. Let rest for a few minutes before serving.

Notes

Make sure the spinach is well drained to prevent excess moisture. You can substitute feta cheese for mozzarella or add ingredients like sun-dried tomatoes for extra flavor.
