- 4 boneless chicken thighs
- 1 cup spinach, sautéed then cooled and chopped
- 1/2 cup cream cheese, softened
- 1/4 cup shredded mozzarella cheese
- 1 tsp garlic powder
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together the sautéed spinach, cream cheese, mozzarella cheese, and garlic powder until well combined.
- Take each chicken thigh and create a pocket by slicing it through the side.
- Stuff each thigh with the spinach and cheese mixture.
- Place the stuffed chicken thighs in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Let rest for a few minutes before serving.
Notes
Make sure the spinach is well drained to prevent excess moisture. You can substitute feta cheese for mozzarella or add ingredients like sun-dried tomatoes for extra flavor.
