Description

Quick and tasty Mediterranean Spinach Quesadillas filled with fresh spinach and gooey cheese.


Ingredients

  • 1/2 pound baby spinach
  • 1/4 teaspoon ground nutmeg
  • Pinch salt
  • 8 ounces cheese (e.g., feta or mozzarella)
  • 4 flour tortillas
  • Olive oil for cooking

Instructions

  1. In a skillet, heat a bit of olive oil over medium heat.
  2. Add the baby spinach and cook until wilted.
  3. Stir in the ground nutmeg and a pinch of salt.
  4. On one half of each tortilla, layer the cheese and the sautéed spinach.
  5. Fold the tortillas in half.
  6. In the skillet, cook the quesadillas for about 2-3 minutes on each side until crispy and golden.
  7. Remove from heat, cut into wedges, and serve hot.

Notes

Serve warm with salsa, sour cream, or lemon juice. Store leftovers in an airtight container in the refrigerator for up to 3 days.
