Description

Quick and delicious Mediterranean Spinach Quesadillas packed with fresh spinach and cheese, perfect for any meal.


Ingredients

  • 1/2 pound baby spinach
  • 8 ounces cheese (feta or mozzarella)
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 24 tortillas
  • Olive oil (for cooking)

Instructions

  1. In a pan, heat a little olive oil over medium heat.
  2. Add the baby spinach and sautรฉ until wilted.
  3. Season with salt and nutmeg.
  4. Place the spinach mixture and cheese on half of a tortilla, fold it over, and cook until golden and crispy, about 2-3 minutes on each side.
  5. Repeat with the remaining tortillas.
  6. Serve hot.

Notes

Serve with salsa or sour cream, and cut into wedges for easy sharing.
