Quick and delicious Mediterranean Spinach Quesadillas packed with fresh spinach and cheese, perfect for any meal.
Ingredients

- 1/2 pound baby spinach
- 8 ounces cheese (feta or mozzarella)
- 1/4 teaspoon ground nutmeg
- Pinch of salt
- 2–4 tortillas
- Olive oil (for cooking)
Instructions
- In a pan, heat a little olive oil over medium heat.
- Add the baby spinach and sautรฉ until wilted.
- Season with salt and nutmeg.
- Place the spinach mixture and cheese on half of a tortilla, fold it over, and cook until golden and crispy, about 2-3 minutes on each side.
- Repeat with the remaining tortillas.
- Serve hot.
Notes
Serve with salsa or sour cream, and cut into wedges for easy sharing.
