- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 6 slices bacon, chopped
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 1/2 cup feta cheese, crumbled
- 1/2 cup chicken broth
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper.
- In a large oven-safe skillet, heat olive oil over medium heat and cook the bacon until crispy. Remove bacon and set aside.
- In the same skillet, add the mushrooms and garlic, and sauté until mushrooms are tender.
- Add the fresh spinach and cook until wilted.
- Stir in the bacon and chicken broth, then place the chicken breasts on top.
- Sprinkle feta cheese over the chicken.
- Transfer the skillet to the oven and bake for 25-30 minutes or until the chicken is cooked through.
- Serve warm and enjoy!
