Description

Delicious chicken breasts smothered in a mixture of fresh spinach, savory mushrooms, and crunchy pecans, perfect for family dinners.


Ingredients

  • 3 cups fresh baby spinach
  • 1 3/4 cups sliced fresh mushrooms
  • 3 green onions, sliced
  • 2 tbsp chopped pecans
  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, heat the olive oil. Season the chicken breasts with salt and pepper, and cook until browned on both sides.
  3. Remove the chicken from the skillet and set it aside.
  4. In the same skillet, add the sliced mushrooms and cook until they are softened.
  5. Add the spinach and green onions, sautéing until the spinach is wilted.
  6. Stir in the chopped pecans.
  7. Place the chicken in a baking dish and top each piece with the spinach and mushroom mixture.
  8. Bake in the preheated oven for about 20-25 minutes, or until the chicken is cooked through.

Notes

This dish pairs well with brown rice, quinoa, or a simple salad. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
