Description

Delicious and easy appetizer with crispy puff pastry, spinach, and feta.


Ingredients

  • 1 cup frozen spinach, thawed and squeezed dry (or 2 cups fresh spinach, sautéed and cooled)
  • 3/4 cup crumbled feta cheese
  • 1/4 cup ricotta cheese (optional)
  • 2 tbsp grated Parmesan (optional)
  • Puff pastry sheets
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine the spinach, feta, ricotta (if using), grated Parmesan, salt, and pepper. Mix until well combined.
  3. Roll out the puff pastry sheets on a floured surface and cut them into squares.
  4. Place a spoonful of the spinach and feta filling in the center of each square.
  5. Fold the pastry over to create a triangle or roll, sealing the edges with a fork.
  6. Brush the tops with beaten egg for a golden finish.
  7. Place the rolls on a baking sheet lined with parchment paper.
  8. Bake for 15-20 minutes or until golden brown.
  9. Serve warm.

Notes

These rolls can be enjoyed warm or at room temperature. Perfect for parties or as a snack.
