Delicious and easy appetizer with crispy puff pastry, spinach, and feta.
Ingredients

- 1 cup frozen spinach, thawed and squeezed dry (or 2 cups fresh spinach, sautéed and cooled)
- 3/4 cup crumbled feta cheese
- 1/4 cup ricotta cheese (optional)
- 2 tbsp grated Parmesan (optional)
- Puff pastry sheets
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine the spinach, feta, ricotta (if using), grated Parmesan, salt, and pepper. Mix until well combined.
- Roll out the puff pastry sheets on a floured surface and cut them into squares.
- Place a spoonful of the spinach and feta filling in the center of each square.
- Fold the pastry over to create a triangle or roll, sealing the edges with a fork.
- Brush the tops with beaten egg for a golden finish.
- Place the rolls on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until golden brown.
- Serve warm.

These rolls can be enjoyed warm or at room temperature. Perfect for parties or as a snack.
