Mediterranean Spinach and Cheese Phyllo Pastry Rolls

Description

Crispy pastry rolls filled with fresh spinach and creamy cheeses, perfect as appetizers or light meals.


Ingredients

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 5 cups fresh spinach (or 10 oz frozen, thawed and squeezed dry)
  • 1 cup feta cheese, crumbled
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg
  • 8 sheets phyllo dough
  • 4 tbsp melted butter for brushing

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft.
  3. Add the spinach and cook until wilted (if using fresh) or heated through (if using frozen). Remove from heat and let cool slightly.
  4. Stir in the feta cheese, Parmesan cheese, salt, pepper, and nutmeg.
  5. Lay one sheet of phyllo dough on a clean surface, brush with melted butter, and layer another sheet on top. Repeat for a total of 4 layers.
  6. Spoon a portion of the filling along one edge of the phyllo. Fold the sides over the filling and roll tightly to form a roll.
  7. Place the rolled pastry on a baking sheet lined with parchment paper. Brush the top with additional melted butter.
  8. Repeat with the remaining phyllo and filling.
  9. Bake for 25-30 minutes, or until golden and crispy.
  10. Serve warm.

Notes

These rolls are best served warm and can be paired with yogurt dip or salad.
