Description
Crispy pastry rolls filled with fresh spinach and creamy cheeses, perfect as appetizers or light meals.
Ingredients

- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 5 cups fresh spinach (or 10 oz frozen, thawed and squeezed dry)
- 1 cup feta cheese, crumbled
- 1/2 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp nutmeg
- 8 sheets phyllo dough
- 4 tbsp melted butter for brushing
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft.
- Add the spinach and cook until wilted (if using fresh) or heated through (if using frozen). Remove from heat and let cool slightly.
- Stir in the feta cheese, Parmesan cheese, salt, pepper, and nutmeg.
- Lay one sheet of phyllo dough on a clean surface, brush with melted butter, and layer another sheet on top. Repeat for a total of 4 layers.
- Spoon a portion of the filling along one edge of the phyllo. Fold the sides over the filling and roll tightly to form a roll.
- Place the rolled pastry on a baking sheet lined with parchment paper. Brush the top with additional melted butter.
- Repeat with the remaining phyllo and filling.
- Bake for 25-30 minutes, or until golden and crispy.
- Serve warm.
Notes
These rolls are best served warm and can be paired with yogurt dip or salad.
