A tasty and healthy snack, these Mediterranean Spinach and Feta Crisps are packed with flavor and easy to make.


Ingredients

  • 1 cup fresh spinach, washed and chopped
  • 2 large eggs, beaten
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the chopped spinach, beaten eggs, garlic powder, dried oregano, salt, and pepper.
  3. Mix until well combined.
  4. Spray a baking sheet with olive oil.
  5. Drop spoonfuls of the mixture onto the baking sheet, flattening them slightly.
  6. Bake for 12-15 minutes or until they are golden and crispy.
  7. Let them cool slightly before serving.

Notes

Chop the spinach finely for better texture. Serve warm with yogurt or tzatziki sauce for dipping.
