- 1 cup fresh spinach, washed and chopped
- 2 large eggs, beaten
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the chopped spinach, beaten eggs, garlic powder, dried oregano, salt, and pepper.
- Mix until well combined.
- Spray a baking sheet with olive oil.
- Drop spoonfuls of the mixture onto the baking sheet, flattening them slightly.
- Bake for 12-15 minutes or until they are golden and crispy.
- Let them cool slightly before serving.
Notes
Chop the spinach finely for better texture. Serve warm with yogurt or tzatziki sauce for dipping.
