- 5–6 medium carrots, peeled and cut into sticks
- 2 tbsp olive oil
- 1 tsp honey
- 1/2 tsp ground cumin
- Feta cheese (to taste)
- Fresh parsley (for garnish)
- Salt and pepper (to taste)
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the carrot sticks with olive oil, honey, ground cumin, salt, and pepper in a bowl.
- Spread the carrots on a baking sheet in a single layer.
- Roast for 20-25 minutes or until tender and slightly caramelized.
- Remove the carrots from the oven and let them cool slightly.
- Serve the roasted carrots topped with crumbled feta cheese and garnish with fresh parsley.
Notes
Cut carrots into similar sizes for even roasting. Consider adding other vegetables or experimenting with different herbs for variety.
