Ingredients

- 2 medium red beets, roasted, peeled, and sliced
- 2 medium golden beets, roasted and chopped (optional)
- 1 cup mixed citrus segments (such as oranges and grapefruits)
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup walnuts, toasted and chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- Fresh herbs (such as parsley or mint) for garnish
Instructions
- Preheat your oven to 400°F (200°C). Wrap the beets in foil and roast them for about 45-60 minutes, or until tender. Once done, let them cool, then peel and slice.
- In a large bowl, combine the sliced red beets, roasted golden beets (if using), citrus segments, and red onion.
- In a separate small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and gently toss to combine.
- Top with feta cheese and walnuts, and garnish with fresh herbs. Serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for best taste within a couple of days.
