Description

A vibrant salad with roasted beets and citrus segments, packed with nutrients and flavor.


Ingredients

  • 2 medium red beets, roasted, peeled, and sliced
  • 2 medium golden beets, roasted and chopped (optional)
  • 1 cup mixed citrus segments (such as oranges and grapefruits)
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup walnuts, toasted and chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or mint) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap the beets in foil and roast them for about 45-60 minutes, or until tender. Once done, let them cool, then peel and slice.
  2. In a large bowl, combine the sliced red beets, roasted golden beets (if using), citrus segments, and red onion.
  3. In a separate small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  4. Pour the dressing over the salad and gently toss to combine.
  5. Top with feta cheese and walnuts, and garnish with fresh herbs. Serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for best taste within a couple of days.
