- 8 oz (225g) pasta (penne, spaghetti, or any pasta you like)
- 2 tbsp olive oil (extra virgin)
- 4 cloves garlic, minced
- 1 pint (about 2 cups) cherry tomatoes, halved
- 3 cups fresh spinach (or more, depending on preference)
- 1/2 cup crumbled feta cheese
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the cherry tomatoes and cook for another 3-4 minutes until they start to soften.
- Stir in the fresh spinach and cook until wilted.
- Add the cooked pasta to the skillet and toss to combine with the vegetables.
- Remove from heat and mix in the crumbled feta cheese.
- Season with salt and pepper to taste.
- Serve warm and enjoy!
Notes
Garnish with additional crumbled feta or freshly chopped herbs like basil or parsley for extra flavor. Leftovers can be stored in an airtight container for up to 3 days.
