Ingredients

  • 3 cups finely shredded cabbage
  • 1 small onion, grated
  • 2 cloves garlic, minced
  • 1/2 cup grated carrot (optional)
  • 2 eggs
  • 1/2 cup chickpea flour or oat flour
  • 1/4 cup crumbled feta cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the shredded cabbage, grated onion, minced garlic, and grated carrot.
  3. In another bowl, beat the eggs and then mix in the chickpea flour or oat flour until well combined.
  4. Add the egg mixture to the cabbage mixture and stir until fully combined.
  5. If using, fold in crumbled feta cheese.
  6. Form the mixture into burger patties and place them on a baking sheet lined with parchment paper.
  7. Bake for 25-30 minutes, flipping halfway through, until golden brown and cooked through.
  8. Serve warm with your favorite sauce or toppings.

Notes

Squeeze out excess moisture from cabbage to prevent sogginess. You can use chickpea flour for a gluten-free option.
