A colorful, flavorful Mediterranean Orzo Salad perfect for light lunches and gatherings.


Ingredients

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and sliced
  • 1/4 cup red onion, diced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the orzo pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, feta, olives, and red onion.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Garnish with fresh parsley and serve chilled.
